  2.5 LBS BEEF&PORK, CHOWMEIN CUT
  2 C SWEET ONION, FINE CHOP
  1/2 TSP GARLIC, GRANULAR
  2 TBSP CHICKEN SOUP BASE
  2 C APPLE JUICE or APPLE WINE (Boones Farm)
  2 (16oz) CANS TOMATO SAUCE
  4-1/3 TBSP CHILI POWDER
  2 TBSP CUMIN, PACKED
  1/4 TSP LEMON PEPPER
  SEASON SALT TO TASTE
  *** OPT ***
  2 (16oz)CANS KIDNEY BEANS, DRAINED
  1/4 TSP CAYANNE PEPPER
     
 

SAUTE MEAT IN SKILLET. PUT MEAT, ONIONS, GARLIC, WINE AND CHICKEN SOUP BASE IN THE CHILI POT AND SIMMER FOR 1-1/2 HOURS. KEEP YOUR HANDS OFF AND LEAVE THE LID ON.!!!!!

ADD TOMATO SAUCE, CHILI POWDER, LEMON PEPPER AND CUMIN. STIR! COOK ON LOW FOR ANOTHER 1-1/4 HOURS.

ADD CAYENNE PEPPER AND KIDNEY BEANS. PUT THE LID BACK ON AND SIMMER FOR ANOTHER 15 MIN ADD SEASON SALT TO TASTE.

IF TOO THICK ADD A LITTLE WATER.



An Alternate recipe for South Bay RV Park

A Winner Tied for 1st Place 2014 at South Bay

  1/2 tsp Garlic Powder
  2 T Chili Powder
  2 tsp Coriander
  2 tsp Brown Sugar Packed
  4 tsp Cumin
  2 tsp Season Salt
  1 Bay leave
  1/2 c Apple Juice
  2 lbs ChowMein grind Meat 1/2 Beef 1/2 Pork
  3/4 C Bell Pepper Chopped
  2 C Sweet Onion Diced fine
  2 15 oz Kidney Beans Drained
  2 15 oz Whole Tomatoes Diced
  2 15 oz Tomato Sauce
  2 tsp Beef Base
  1 C Water
  1/4 tsp Cayenne Pepper
 

Directions:

Brown the meat in a fry pan add onion and green pepper and saute. Drain off the Fat.

Place all ingredients EXCEPT the beans in a crock pot and slow cook on low for 6 hours.  Turn up heat to high, add the beans, return heat to low after 15 minuets then serve.
